Fresh Fruit Gelato Recipe
Ingredients:
- 2 cups fresh fruit (strawberries, mangoes, peaches, or berries)
- 1 cup sugar
- 1 cup whole milk
- 1 cup heavy cream
- 1 tablespoon lemon juice (optional, for added flavor)
- 1 teaspoon vanilla extract (optional)
Instructions:
Prepare the fruit: Wash and chop the fresh fruit into small pieces. If using berries, leave them whole or halve them.
Puree the fruit: In a blender or food processor, blend the fruit with ½ cup of sugar until smooth. For a chunkier gelato, pulse briefly to retain some texture.
Mix liquids: In a bowl, combine the remaining sugar with milk until dissolved. Add the heavy cream, lemon juice, and vanilla extract, then mix well.
Combine: Stir the fruit puree into the milk mixture until fully incorporated.
Chill: Cover and refrigerate the mixture for at least 2 hours, or overnight, to enhance flavor and ensure it’s cold.
Freeze: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Serve or store: Transfer the gelato to an airtight container and freeze for an additional 2-3 hours if a firmer texture is desired.
